This is an idea that I truly like. I've always wanted to do a big project like this, but never really had the motivation to. I'd be willing to lend a hand in the organization/management of the project. I could also help out with the design of the buildings.
Here's what I think about the Giza Pyramid: why not, instead of building just the single pyramid, build the complex itself. That includes the pyramids, the tunnels, the sphinx, and anything else. Obviously there are issues with that idea, but it's something I wouldn't throw out the window entirely without a little more discussion.
The three easiest I think we could start with would be the Temple of Artemis, the Tomb of Halicarnassus, and the Lighthouse of Alexandria. They have relatively simple exterior designs for the most part that I think would easily be converted into Minecraft.
One other build that I think would be interesting to do (but that poses its own unique challenges) would be Petra.

If i remember correctly ind and i were once plannign on building the statue of zeus at olympia, but never got to it. I made a dirt version of the statue itself in flatlands back then for testing. I think the warp was something like testolympia, dunno for sure
it is still there, the sword failed but i think the rest looks quite good

Im gonna work on the lighthouse..... Im going to need alot of sandstone and a flat area near the sea.
