Benj, when I tried to get my NAT open on the PS3, I followed a similar process as mentioned below, however it's only similar. I don't actually remember what I did, however this seems legit enough.
Follow this video tutorial:
After you've understood most of it, follow these slightly simplified steps I saw in the video comments:
Instead of changing everything around, you can go PS3 > Network Settings > Settings and Connection Status List and note the IP.
Then go to router and enable DMZ and change it to that IP.
You're NAT should Open then.
If not, follow what's in the video to the letter.
